This technique is a cornerstone of cheese classification, distinguishing categories like fresh, soft-ripened, semi-hard, hard, and blue cheese. Production and Technique
Cheese aging begins with salting, which regulates moisture and inhibits undesirable microbial growth. The young cheese is then moved to specialized environments like caves or climate-controlled rooms. Temperature and humidity are meticulously managed to guide the biochemical transformations.
Techniques include surface-ripening, where molds or bacteria are introduced to the rind, and internal aging, where changes occur throughout the paste. Affineurs may also wash, brush, or turn the cheeses regularly. These actions ensure even development and prevent spoilage, directly influencing the final cheese style.

Specific aging techniques are often tied to regional traditions and protected designations. English Clothbound Cheddar is aged for months or years in cloth, developing a crumbly texture and earthy, tangy flavors. The process is integral to its identity and is regulated by its name.
French Comté must be aged for a minimum of four months, but often for over a year, in specific cellars. This develops its complex nutty and fruity profile.
